Easter Mini Egg Cheesecake

Easter Recipes… They’ve got to be fun for the whole family right?
How do you celebrate Easter in your family? Do you have an Easter party or special meal? Here is a quick and easy but delicious recipe that you have to try with your family or friends this easter!

STEP 1:  MAKE YOUR BASE
- add 150g Digestive biscuits into bowl
- Crush the biscuits until they look lumpy and sandy then mix with the melted butter.
-Put the mixture into the bottom of 4 tumbler sized glasses.

 

Step 2:  CREAM TOPPING 
-Combine the 300ml whipped cream, 50g icing sugar, 300g cream cheese, 2tps lemon juice and about a third of the chopped Mini Eggs.
- Beat until thick and put cream mixture into glasses

 

STEP 3: GANACHE 
-Top with the remaining cheesecake mixture and add the remaining Mini Eggs on top.
-Chill until you are ready to serve.
